10 Easy One Pot Meals for the Busy Homestead

Easy one pot meals? I’m down with that.  One pot meals mean few dishes and less time spent cooking. Time is something there is never enough of on a homestead and a quick, delicious meal is a lifesaver.

There are many days when the last thing I want to think about is what we’re going to have for dinner, let alone think ahead of time and prep for cooking. Are you with me? I bet you are. This is especially true during the spring, summer and fall when there is so much to do outside.

I’ve done some searching for you (and me!). These easy one pot meal recipes look absolutely delicious. I’ve examined the recipes and the ingredients and we could totally pull these off on a busy night. I’ve tried to include a good variety, though many one pot meals inevitably involve pasta in some way. What I’d really like to do is line all of these up buffet style and take a little of each!

One pot chicken fajita pasta - no big mess to clean up! Love it!

1 – This looks savory and utterly delicious – can you tell it’s almost dinner time here? I could eat the whole thing. Here is the recipe from Chew Out Loud – 20 Minute Chicken Fajita Pasta.

2 – This is a recipe from Pillsbury – love me some chicken, bacon & ranch. Here in Iowa we can’t get enough bacon and ranch dressing, so this recipe is right up my alley! One Pot Chicken Bacon and Ranch Pasta

3 – I can taste this one right now – yum. How can you not like a good gooey beef recipe with noodles? This one is from Homestead Wisconsin – Hungarian Goolash.

4 – Two of my favorite food words – Mexican and cheesy – need I say more? I found this over at Dinner Then Dessert – Cheesy Taco Pasta.

5 – Hungry yet? Me too. Let’s keep going and wish we hadn’t. I love orange chicken, and I’m betting this orange beef recipe is a winner. This is from The Kitchn – Crispy Orange Ground Beef & Veggies.

6 – One of the ultimate comfort foods. How about this on a cold winter night – or any night! From The Slow Roasted Italian – 30 Minute Chicken and Dumplings.

7 – Ooey and gooey – and CHEESE.  This One Pot Cheesy Mexican Beef and Rice recipe is from Averie Cooks.

8 – This is downright fabulous – chicken and roasted peppers. I love roasted peppers – brings out that savory sweet charred flavor. This recipe from Pillsbury will have your mouth watering! One-Pot Creamy Chicken and Roasted Pepper Penne

9 – Wow – how delicious does this look?  First off – sausage. Second – sausage. I bet this would be good leftover the next day also! Snagged this one for us from Betty Crocker – One Pot Pasta Bolognese.

10 – And finally, the last recipe but certainly not the least. This one is a nod to good clean eating, something we aspire to on the homestead. I found this over at The Gracious Pantry – Clean Eating Goulash.
